Partially update organization

PATCH 
/organizations/:id/

GET /organizations/<id>/ — retrieve: any member of the organization. PATCH/PUT /organizations/<id>/ — update: members holding the org-wide Admin role only. Writable fields: name, email.

No list/create/destroy: organizations are created via signup, not this endpoint, and there's no self-service "delete an organization" — use status=suspended for deactivation (staff-only, not exposed here yet).
